Sukka is nothing more than dry masala; this delectable dish is created with chicken, entire spices, and a few herbs.

In India, there are several ways to prepare chicken. Each region has its own recipes produced with ingredients that are readily available there, such as the south's dominance of coconut, shallots, and poppy seeds and the north's cashew paste and cream. I primarily prepare chicken and mutton curries with shallots and coconut. Whole spices are used to produce this curry, which improves the flavour and taste.

 

INGREDIENTS
Marinating chicken
:
500 gms
Chicken
1 tsp
Chili powder
1 tsp
Garam masala
¼ tsp
Turmeric powder
½ tsp
Ginger garlic paste
1 tsp
Chicken masala (optional)
Salt
for taste
¼ cup
Fried onions (optional)
Preparing ground masala
:
1 tsp
Fennel
1 inch
Cinnamon
2
Cardamom
3
Cloves
1 tbsp
Coriander seeds
3 tbsp
Coconut
4-5
Dried red chili
Cooking chicken sukka
:
1
Bay leaf
1 tsp
Cumin / jeera
½ cup
Onion Finely chopped
2 spring
Curry leaves
½ cup
Tomato finely chopped
1 tbsp
Ginger garlic paste
2 tbsp
Coconut Oil
Salt
for taste
2-3 tbsp
Water
PREPARATION

 

To marinate the chicken

 

     Add the chicken pieces, chilli powder, garam masala, chicken masala, turmeric, and fried onions to a large bowl.

     Chicken should be well-rubbed, mixed, covered, and left to rest for 30-45 minutes.

 

To make ground masala

 

     Dry-roast coriander seeds, fennel seeds, cinnamon, and dried red chilli in a pan on medium until fragrant.

     Add shredded coconut and roast it for another 2 minutes and switch off the flame.

     Let it cool, then pulse it into a slightly coarse powder.

 

To make chicken sukka

 

     Cumin/jeera, bay leaf, and curry leaves must be added to a hot pan with coconut oil and sauteed for 20 to 25 seconds.

     Add the finely chopped onion and cook it until it turns golden.

     Add fresh ginger garlic paste and fry it till it turns aromatic

     Then, add salt and finely diced tomatoes, and simmer until the mixture is mushy and soft.

     Mix well before adding the chicken pieces that have been marinated.

     After that, cook for 5 minutes with a cover on medium heat.

     If the masala becomes too dry, whisk in 1/4 cup of water before cooking.

     Add the freshly ground masala powder when the chicken is halfway done cooking and thoroughly combine so that the masala powder coats the meat.

     Once more, cover the pan and cook the chicken over medium heat for 8 to 10 minutes, or until it is cooked through.
