INGREDIENTS
Chicken Coating/Marinade:

Chicken thigh meat [boneless & skinless]
2 tbsp
Cornstarch
2-3 tbsp
Oil
1 tbsp
Black pepper
Salt for taste
For Mango Chicken Sauce:

2 tbsp
Butter
1 ripe
Mango chops
1/3 cup
Honey
1/4 cup
Soy sauce
1/2 cup
Red chilli sauce or red pepper flakes
1/4 cup
Chicken stock

Garlic cloves [diced]
1
Lime juice
1 tsp
Fresh ginger [diced]
PREPARATION
  • Slice the mango pulp finely, then save. Combine honey, soy sauce, chicken stock, lime juice, ginger, garlic, and red pepper flakes in a small bowl. Likewise, put it aside.

  • Remove as much fat as you can while chopping the chicken thighs into small pieces.

  • In a bowl, add Cornstarch, salt, black pepper with the sliced chicken. Cornstarch should be well mixed into the chicken to cover it all equally.

  • First, heat oil over medium to medium-high heat in a big cooking pan. Chicken coated in flour is added, and it is fried until nearly done on all sides. Chicken should be removed and kept aside.

  • In another pan, add butter and heat it to medium. Now add diced mango, garlic cloves and garlic chopped and toast well for 5 minutes.

  • Simmer the heat, add soya sauce, red chilli sauce, tomato puree or ketchup or honey, needed salt for taste, and stir for couple of minutes.

  • Finally add fried chicken to the saucy mango and cook for other 4 minutes, until sauce thickens.

  • You can garnish it with coriander leaves or shallots and serve it hot with jasmine rice or coconut rice.
